Garlic Tamarind Gravy (Poondu Kulambu)

Ingredients

Garlic pods, peeled - 1 cup
Mustard seeds - 1 tsp
Onion, chopped - 1
Tomato, chopped - 2
Tamarind - Lemon sized
Red Chillies - 3
Chilly Powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Coriander powder - 3 tsp
Coriander leaves - few
Oil - 2 tsp
Salt to taste

Method

  • Soak tamarind in water for 10 Min's and extract a cup of tamarind juice from it and keep aside.
  • Heat oil in a pan, add mustard seeds to it, after it splutters add red chillies to it.
  • Add the chopped onions to it and fry till they are golden brown.
  • Then add tomatoes and fry till they become soft.
  • Add garlic, turmeric powder, chilly powder and coriander powder to it and mix well.
  • Then add tamarind juice, 1 cup of water and salt to it.
  • Cook the gravy till it becomes thick and garlic are soft.
  • Garnish with coriander leaves and serve it.

Strawberry Frozen Yoghurt

Ingredients
Strawberry - 10
Yogurt - 1/4 cup
Condensed Milk - 1/4 cup
Cashews, Dried Grapes - few, chopped
Cream for Topping

Method
  • Take a bowl and line with foil and place the chopped nuts on the bottom of the bowl.
  • Blend together strawberries, yogurt and condensed milk in a blender until smooth.
  • Pour this mixture into the bowl and cover with foil.
  • Freeze until firm.
  • Use edges of foil to remove from bowl. And thaw for 5 to 10 Min's.
  • Top with cream and serve it.

Spicy Chicken Fry

Ingredients
Chicken pieces - 1/4 kg
Onion - 1
Tomato - 1
Green Chillies - 2
Pepper crushed - 1/4 tsp
Coriander Leaves - few
Oil - 3 tsp
Salt to taste
To Make Paste
Garlic - 5 pods
Ginger - 1" piece
Cinnamon - 3 sticks
Cloves - 2
Chilly Powder - 1/2 tsp
Coriander Powder - 2 tsp

Method
  • Chop Onion and tomatoes, slit green chillies and keep aside.
  • Make a paste with the above said ingredients.
  • Heat oil in a pan, add chopped onion and green chillies fry for 2 Min's.
  • Add the grounded paste to it and fry till raw smell goes off.
  • Add chopped tomatoes to it and fry for 2 Min's.
  • Then add the chicken pieces to it.
  • Add chilly powder, pepper powder, salt and enough water to it and mix well.
  • Cook until the chicken done.
  • Garnish with coriander and serve it.

Onion Tomato Chutney

Ingredients

Onion - 2
Tomato - 2
Red Chillies - 5
Coriander leaves - few
Oil - 3 tsp
Salt to taste

Method

  • Chop onions and tomato very finely and keep aside.
  • Heat oil in a pan, add red chillies to it and fry for one min.
  • Add chopped onions to it and fry till golden brown.
  • Then add chopped tomatoes to it and fry for 5 Min's or till raw smell goes off.
  • Finally add chopped coriander leaves to it.
  • Grind coarsely and serve it with dosa, idli.
The spicy ,the sour taste combination is always a favorite one for my hubby. Till day this is one of his favorite one and he loves it.

Aloo Tikki

Ingredients

Potato - 5
Spinach leaves- 1 cup
Green Chillies - 3
Ginger root - 1/2 "
Coriander leaves - few
Chaat masala - 1/4 tsp
Corn Flour - 2 tsp
Salt to taste
Oil to deep fry

Method
  • Boil potatoes and mash them and keep aside.
  • Wash spinach and chop them finely.
  • Chop green chillies, ginger and coriander leaves finely
  • In a bowl to the potato add all the chopped ingredients, chaat masala and salt and mix them well.
  • Make balls and roll over corn flour and flatten it.
  • Heat oil in a pan and deep fry them.

Easy Egg Briyani

Who don't like to prepare easy and delicious recipe. That too briyani. Yummy right. One day i like to have briyani, but i don't want to grind masala all those things and don't want to go out to buy mutton also. So i decided i would do with egg. Here's the recipe.

Ingredients
Boiled Eggs - 2
Basamati rice - 1 cup
Bay leaves - few
Cashew nuts - few
Cardamom - 2
Onion - 1, chopped lengthwise
Tomato - 2
Ginger garlic paste - 1 1/2 tsp
Garam masala powder - 1 1/2 tsp
Green chillies - 2
Oil
Salt to taste

Method
  • Heat oil in pressure cooker, add cashew nuts, bay leaves, cardamom and fry for one minute.
  • Then add the chopped onions, green chillies and fry till it becomes golden brown in color. Add tomato and fry for 2 Min's.
  • Then add ginger garlic paste and garam masala powder to it and fry for 2 more Min's.
  • And then add the basmati rice and add water accordingly.
  • Pressure cook for 2 to 3 whistles. Serve with boiled eggs and roasted cashews.
