Adai Dosa

Adai - a simple and delicious south indian pancake made with rice and lentils. Its a very popular breakfast recipe in Tamilnadu. Eaten along with coconut chutney adai will taste yummy. Coconut chutney is perfect pairing to adai. My mom makes a very good adai dosa. Her adai dosa would be crispier, light and tasty. Here is the recipe which i learnt from my mom.

Adai

Ingredients
  • Split Red Gram(Toor Dhal) - 1 cup
  • Bengal gram split ( Channa - 1/2 cup)
  • Split Green Gram - 1 1/4 cup
  • Black Gram split (Urad Dal) - 1/4 cup
  • Horse Gram - 1/4 cup (Optional)
  • Par Boiled Rice - 1/2 cup
  • Boiled Rice - 1/4 cup
  • Dry Red Chillies - 8 to 10
  • Cumin Seeds - 1/2 tsp
  • Pepper Corns - 1/4 tsp
  • Garlic - 3 cloves
  • Curry Leaves - few
  • Onion - 1, chopped (optional )
  • Asafoetida - 1 tsp
  • Grated Coconut - 1/4 cup (optional)

Method
  • Wash all the grams/lentils and rice thoroughly and soak them in water for 3 hrs, except horse gram soak it separately.
  • Soak dry red chillies in water, so that it will grind easily and finely.
  • After 3 hrs, place the dry red chillies, cumin pepper seeds, curry leaves and handful of soaked gram and rice in a mixie jar or in a food processor jar and grind them.
  • Then add the soaked dal, rice and grind to a coarse batter by adding little water. This will take about 10 minutes
  • Add the grated coconut and continue to grind for another 2 minutes.
  • Then add chopped onions to it and grind once. Add asofoetida and salt, mix well.
  • The adai dosa can be prepared immediately after grinding or even you can allow it to ferment and make dosa.
  • Heat the dosa tawa and pour a ladleful of batter and spread to a round shape, drizzle some oil to it and flip and cook on the other side and serve hot with coconut chutney.
