Spinach and Carrot Rice

I always include plenty of greens in my diet. That's how i came with the recipe Palak/ Spinach and carrot rice and also palak is one of my favorite greens. This recipe is very simple and quick to make, healthy and also too good for lunch box.
Spinach & Carrot Rice


Ingredients
  • 2 cups of Cooked rice
  • 1 Onion, medium sized, chopped
  • 3 Green Chillies, slit lengthwise
  • 1 Dried All Spice leaf (you can substitute bay leaf instead)
  • 1 tsp Cumin seeds
  • 1 tbsp Ginger Garlic paste
  • a pinch of turmeric powder
  • 1 tsp Coriander powder
  • 1 small Carrot, very finely chopped
  • 2 small bunches of Spinach leaves
  • Sal to taste
  • 2 tbsp of Vegetable Oil
Method
  • Wash and chop the spinach leaves and keep aside.
  • Heat oil in a wok/ kadai, when hot add cumin seeds and fry for 5 seconds.
  • Then add in chopped onions and green chillies fry till it turns pink.
  • Next add ginger garlic paste and all the powders and saute for 30 seconds.
  • Add carrots to it and saute for 1 Min.
  • Next add spinach leaves and cook for2 to 3 Min's.
  • Then add the salt and cooked rice and mix well.
  • Switch off the flame and squeeze some lemon juice if you like.
  • Serve with papads.
