Banana and Walnut Muffin

Banana Walnut muffins- a great way to use over ripe bananas and this can be your breakfast recipe or a tea time snack. I love making these muffins because these are very fast and takes only few minutes to make...just mix all the ingredients together and bake them for few mins. I loved the combination of mashed bananas with crunchy nuts and hint of cinnamon powder. Here is the recipe.

Ingredients
  • 60 gms Unsalted Butter, melted and cooled
  • 120 gms Maida flour
  • 75 gms Sugar
  • 1/2 tsp Baking powder
  • 1/4 tsp Baking soda
  • pinch of salt
  • 1/2 tsp Cinnamon powder optional
  • 1 large Egg, lightly beaten
  • 2 medium sized, ripe Banans, mashed
  • 1/2 tsp Vanilla Extract


Banana & Walnut Muffins
Method
1.Preheat the oven to 180 degree C (350 degree F). Line the muffin tray with paper liners or grease it with butter and dust with flour and keep aside.Toast the walnuts in a pan in medium flame. Let them cool and chop coarsely.

2.In a large bowl combine flour, sugar, baking powder, baking soda,salt,cinnamon powderand nuts and keep aside.

3.  In an another bowl combine mashed bananas, lighlty beaten egg, melted butter and vanilla extract and keep.

4. Then fold the wet ingredients into dry ingredients and combine well till the batter becomes thick and chunky.Spoon into prepared muffin tray and place in them in the middle rack of the oven and bake them for 20 to 30 Min's or until toothpick inserted into the center of muffin comes out of clean.

Makes 6 Muffins.
