Vanilla Cup Cakes with Buttercream Frosting

Hi Friends, hope you all had a wonderful New year celebrations. New year is a time for giving and receiving gifts. And this year i got a wonderful new year gift from my lovely hubby.....Any guess? okay clue is in the title of the post....i think most of you would have guessed correctly....yes its an OTG. Happy...Happy....very happy. Wish me all happy baking and you will be seeing some baking recipes also in my space. Share with me what gift you all have got for this new year. We celebrated this happiness with simple Vanilla cup cakes.
Vanilla Cupcakes


Ingredients
  • 60 gms (1/4 cup or 2 oz) of Unsalted Butter
  • 75 gms ( 1/3 cup or 3 oz) of Castor Sugar
  • 1 Large Egg, beaten or 2 medium sized eggs
  • 1 cup or 8 oz of All purpose flour
  • 3/4 teaspoon of baking powder
  • a pinch of salt
  • Lemon zest from half a lemon
  • 1/2 tsp of Vanilla Extract
  • 30 ml of Milk
Ingredients For Butter Cream Frosting
  • 50 gms (2 oz) of Butter
  • 1 cup of Icing sugar
  • 1 tbsp Milk
  • 1/2 tsp of Vanilla Extract



Vanilla Cupcakes
Method
  • Preheat the oven to 180 degree C and line the muffin cups with paper liners.
  • Cream the butter in a large bowl with the help of hand mixer.
    • Add the sugar and beat until the mixture is light and fluffy.
    • Gradually add the egg and beat well. Then beat in the Vanilla extract.
    • In a separate bowl sift the flour, baking soda and salt together. Add the lemon zest and whisk them together.
    • Add the flour mixture and milk to the butter mixture in additions, whiz all the ingredients together  with the help of hand mixer kept in low speed. Scrape the sides of the bowl in between.
    • Fill the muffin cups 3/4 th each. Place in the middle rack of the oven and bake them for 15 to 17 Min's.
    • Check the cake whether it is completely baked with the help of a toothpick inserted into a cupcake comes out clean.
    • Remove the cake from the muffin tin and place on a wire rack to cool before you ice them.

    Butter Cream Frosting Method
    • Cream the butter till smooth with the help of hand mixer.
    • Add in the vanilla extract.
    • With hand mixer on low speed, add the icing sugar gradually and beat.
    • Next add the milk and beat on high speed till the frosting becomes light and fluffy.
    • Once the cup cake have completely cooled frost with icing and grate some chocolate over it for decoration.
    Makes about 9 cup cakes.
