Butterscotch Blondies with Pecan Nuts

It's been long since i updated my blog. I haven't posted anything in the blog for a while. When Lubna of  " Yummy Food " asked me to do a guest post for her Christmas baking series i immediately told yes. Thank you Lubna for giving me this wonderful opportunity. She has a wonderful blog and i always admire her passion towards blogging. She is very good friend of mine and we became friends through blogging. When we were staying in the same apartment in Bangalore, we used to go out together, have lunch together and also we used to go out for reviews along with my other blogger friends Satrupa Dash and Deepasri Deb. We four often have potluck together. I remember how fun filled those days where. I miss you all guys.

Ok now coming to today's post, i m going to share a simple baking recipe of Butterscotch Blondies with Pecan nuts. Blondies are like brownies without cocoa and contains brown sugar but substitutes vanilla for cocoa. Like brownies, blondies also have other flavourful additions like nuts, desiccated coconut, chocolate chips etc.

Please do check for the recipe of Butterscotch Blondies at Yummy Food.

Pumpkin and Chocolate chips Cookies

I was craving some cookies and decided to bake on my own and i came across this pumpkin cookie recipe from Joy of Baking. With a few little changes, i have made them my own. I made these cookies with home made pumpkin puree and freshly ground spices, they were wonderful and turned out fantastic. These cookies are something different, the consistency is more cake-like than cookie. The earthy flavour of pumpkin and the spices added are complementary to each other. The chocolate chips added makes them more special and yumm. If you like pumpkin, you will definitely like these cookies.

I got this wonderful recipe from the book 'frame>by>frame Baking' from parragon books. I love this book because of frame by frame pictures. I tried this Cinnamon squares from the book and made lil changes. As i dont have sour cream i substituted lemon juice plus cream to it and also one more change i used flax seeds instead of sunflower seeds. I loved the sweet taste and flavour of cinnamon in it. They came out absolutely perfect.. light crust, crunchy on the top and soft inside. I simply loved the burst of cinnamon flavor in every bite.

Rachel Allen is popular TV Chef and author of best selling cookbooks. I recently rented her Rachel Allen 'Bake' cookbook. This book was very well written, easy to read and easy to make recipes. Also this book includes beautiful food photographs and step by step instructions for some of the recipes. I really enjoyed reading her book and tried some recipes from this book. One of the recipe i tried is her basic cookie recipe. She have  mentioned many variations to the cookie recipe like adding poppy seeds, mixed spice, chocolate chips, cardamom powder, dried fruits etc. Her basic cookie recipe is a great basis for many great flavourful combinations.I tried the variation of adding only coco powder to the basic cookie recipe. And it just came out perfect, crunchy and yummy on my first try itself. Here is the recipe.
