Broccoli and Egg Stirfry - a tasty and healthy stirfry recipe and this dish is ready in less than 10 mins. This is Indian style broccoli and egg stirfry recipe made with very few ingredients.

This broccoli and egg is a perfectly healthy meal to try when you want to make something quick and delicious.  Broccoli and egg, they are both healthy and filling. So far a healthy meal that's easy to make, this broccoli and egg stir-fry is a perfect choice.


Ingredients
  • 2 cups Broccoli florets
  • 1 tbsp chopped Garlic
  • 1 tsp Red Chili powder
  • ¼ tsp Turmeric powder
  • 2 Eggs, beaten
  • ½ tsp Pepper powder
  • Salt as required
  • 2 tbsp Oil
Method:
  • Boil ½ liter of water in a saucepan, add the chopped broccoli florets and cook for 3 mins on high heat. After 3 mins drain the water through a sieve and keep the broccoli florets aside.
  • Heat 1 tbsp oil in a frying pan, add the chopped garlic, and fry for few seconds.
  • Next, add the broccoli florets red chili powder, turmeric powder, and salt. Cook for 5 mins or till done on medium heat. Once cooked, move the broccoli to one side of the pan.
  • Heat 1/2 oil on the other side of the pan, add the lightly whisked eggs. Add salt and pepper as required. 
  • Gently scramble them and cook until set. Then mix the egg with broccoli and cook for a min and serve hot.

Chicken Curry for Beginners with curry powder | Chicken Curry for Bachelors | Chicken Gravy | Simple and Yummy Recipes

Today's recipe is easy and quick chicken curry for beginners. I have made the recipe very simple and have not used any fancy ingredients. Also, there is no blending or grinding work involved. Hence this chicken curry is also perfect for bachelors and beginners. 

I have explained with step-by-step pictures and also I have included the video recipe too. This recipe method uses chicken curry powder, a store brought powder, so it is a perfect recipe for beginners. This recipe goes well with almost all the main dishes like rice, roti, naan, etc. So if you are even a novice. just go ahead and give this chicken curry a try.

Preparation time: 10 mins
Cooking time:  20 mins
Serves: 2

Ingredients
  • 500 gms Chicken pieces
  • 1 Onion, large-sized, chopped
  • 2 Tomatoes, chopped
  • 1 Green Chili
  • Few Curry leaves
  • 1 tbsp Ginger Garlic paste
  • 2 tbsp Chicken curry masala powder ( ready-made )
  • 1 tsp Red Chili powder
  • ¼ tsp Turmeric powder
  • 1 cup Coconut Milk
  • 2 cups of Water
  • 3 tbsp Oil
  • Salt as required
  • few Coriander leaves for garnishing
Whole Spices
  • 1 tsp Fennel Seeds
  • 2 Cinnamon sticks
  • 3 Cloves
  • 2 Cardamom
  • 1 Star Anise
  • 1 Bay Leaf
Method:
  • Heat 3 tbsp oil in a kadai / wok, when hot add fennel seeds, and fry. Next, add the whole spices and fry for a few seconds.
  • Next, add the chopped onion, green chili, curry leaves and saute till the onion turns soft.
  • Add Ginger garlic paste and fry till the onion becomes light golden brown in color.
  • Next, add the chopped tomatoes and little salt Saute til the tomatoes becomes soft and mushy on medium heat.
  • Add the chicken curry masala powder, red chili powder, turmeric powder, and saute for 2 mins on low heat.
  • Next, add the chicken pieces and mix well to coat the chicken with the masala. Cover and cook the chicken for 5 mins on high heat.
  • After 5 mins open the lid, add 2 cups of water, required salt, and mix well. Bring it to a boil. 
  • Cover and cook for 15-20 mins or till the chicken get cooked on medium heat. Stir in between.
  • After the chicken gets cooked add coconut milk and cook for 3 mins on medium heat.
  • Finally, add the coriander leaves and serve hot with rice, roti, naan, etc.

Chettinad Mushroom Pepper Masala | Chettinad Mushroom Recipe | Spicy Mushroom Gravy | Mushroom Curry | Simple and Yummy Recipes

Ingredients:
  • 200 gms Button Mushrooms
  • 1 Onion, chopped
  • 1 Tomato chopped
  • 1 tbsp Ginger Garlic paste
  • ¼ cup grated coconut
  • few Coriander and Curry leaves
  • 2 tbsp Oil
  • Salt as required
Whole Spices
  • 1 Cinnamon Stick
  • 3 Cloves
  • 1 Star Anise
  • 2 Green Cardamom
  • ¾ tbsp Coriander Seeds
  • 1 tbsp Peppercorns
  • 1 tsp Fennel seeds
  • 1 tsp Cumin seeds
  • 4 Dry Red Chilies
Method:
  • Dry roast the spices for 2 mins on medium heat ( Cinnamon Stick, Cloves, Star Anise, Green Cardamom ) Next add coriander seeds, cumin seeds, fennel seeds, peppercorns, and again roast the spices for 2 mins on medium heat. Finally, add the dry red chilies and roast again for 2 more mins on medium heat. Then remove to a plate and set aside to cool completely.
  • To the same pan add the grated coconut and dry roast for 2 mins on medium heat. Remove to a plate and allow it cool completely.
  • Transfer the cooled spice mixture to a mixie jar and grind to a smooth fine paste and keep aside.
  • Heat 2 tbsp oil in a wok / kadai, when hot add curry leaves, onion, green chilies. Fry till the onion becomes light golden brown color on medium heat.
  • Add ginger-garlic paste and sate for a min on medium heat.
  • Next, add tomatoes, a little salt, and saute till it becomes soft and mushy.
  • Then add the ground masala paste and 1 /2 cup of water. Mix well and bring it to aboil. Saute till the mixture leaves oil or till the raw smell of the mixture goes off.
  • Then add the chopped mushrooms and mix well to coat the paste. Cover and cook for 10 mins on medium heat.
  • After 10 mins open the lid and mix well. Then add 1 cup of water to it, salt as required, and mix well. Cover and cook the gravy for 10 mins on medium heat.
  • Garnish with coriander leaves and serve hot.

Spanish Omelette | Potato Omelette | Spanish Tortilla | Easy & quick Breakfast Recipe | Simple and Yummy Recipes

Spanish Omelette or Spanish Tortilla is a traditional dish from Spain. It is one of the signature dishes in Spanish cuisine. It is an omelette recipe made with eggs and potatoes, optionally including onion.

In Spanish, it is called “tortilla de patatas” - the world-famous Spanish potato omelette. You can either include onion or not. In Spain, it is usually served as a tapa (snack ). As a tapa, it is usually cut into bite-sized pieces and served.




Preparation time:  5 mins
Cooking time: 25 mins
Serves: 2

Ingredients
  • 3 Potatoes, medium-sized
  • 1 Onion, medium-sized
  • 3 tbsp Olive Oil
  • Pepper powder as required.
  • Salt as required
Method:
  • Cut the potato into quarters and slice them into thin pieces. Slice the onion lengthwise.
  • Heat 3 tbsp oil in a wide frying pan, add the sliced onion, potato, and 1/4 tsp salt. Saute them for 2 mins on high heat.
  • Cover and cook for 15 -20 mins on low medium heat. Stir occasionally and cook till the potatoes are softened. Set aside to cool completely.
  • Break 4 eggs in a large bowl. Add salt and pepper as required. Mix well and beat them lightly.
  • Next stir in the sauteed onion and potatoes. Mix well and set aside for 5 mins.
  • Heat 1 tbsp oil in a wide frying pan or an omelette pan. Pour the egg mixture gently to the pan.
  • Cook on low medium heat until it sets on top. This will take 3-4 mins.
  • Gently scrape the side of the pan using a spatula.
  • When almost set invert the omelette to a plate. Then slide back the omelette to the pan and cook until done on medium heat. Serve hot
