Moringa Soup| Immunity Booster Soup Recipe | Murungai Keerai Soup Recipe | Easy Method | Simple and Yummy Recipes

Moringa leaves soup recipe - a healthy, easy, quick, and delicious soup recipe. Drumstick leaves or moringa leaves popularly known as murungai keerai in Tamil. It is one of the most common green varieties used in the Tamil kitchen. In almost all the houses in Tamilnadu, they have this tree in the backyard. The moringa leaves, moringa pods, and the moringa flowers are all edible and you can prepare different delicious dishes with them.

Moringa leaves are very rich in vitamins, antioxidants, and minerals. According to science, it is said that moringa is 7 times more Vit C than oranges, 10 times more Vitamin A than Carrots, 17 times more calcium than milk, 9 times protein than yogurt, 15 times more potassium than a banana, and 25 times more iron than spinach.

Ingredients
  • a small bunch of Moringa leaves
  • 1 tbsp Split PigeonPeas (Toor dhal)
  • 2 -3 nos. Garlic cloves
  • 5 -6 nos. Shallots
  • ½ tsp Cumin seeds
  • ½ tsp Pepper
  • 1 small  Tomato, chopped
  • ¼ tsp Turmeric powder
  • 1 cup Water
  • 1 cup warm water
  • Salt as required
Method:

  • Strip the leaves from the stem using your fingers. Discard the thick stalks. Then wash the leaves in the water.
  • Add all the ingredients one by one to the pressure cooker except water. Finally, add 1 cup of water and mix well.
  • Pressure cooker it for 3 whistles on medium flame. When the pressure goes down open the lid and allow it to cool.
  • Once the moringa leaves mixture cooled down and add it to a blender or mixie jar. Grind them to a smooth paste.
  • Then add 1 cup of warm water and mix well. Or add as much water to make it thin. Strain through the sieve and serve warm.

Some days back in Bangalore there was heavy rain. It had rained heavily in the night and had stopped by morning. As usual i got up and opened my door to take the milk packets. It has just stopped raining. When i came near the gate to take the milk packets, i looked out and everything around me  looked so fresh and clean.  The trees, small garden in front of my house, my terrace garden looked even more green and sparkling. Then i took out my little gadget (camera ) and shot some pictures. When i was   coming down from my terrace i saw some little boys playing and enjoying in their own way. They saw me clicking photos of them, they invited their other little friends and wanted me to click the photos of all.

Recently i won the giveaway at Raven's Cook Eat Delicious for my Pumpkin and Chocolate Chip Cookies. I won a cookbook called " Pumpkin - A Super Food for all the 12 Months of the Year " by DeeDee Stovel. The book has pumpkin recipes for starters, soups, salads, maincourse, bread, pies, cakes, cookies and desserts. Very nice book with lots of recipes with fresh and canned pumpkin. I made the roasted carrot and pumpkin soup. The soup was tasty and good, loved it. Here is the recipe.

Fresh Green Peas Soup

Fresh green peas are winter season crop. During winter I always use fresh green peas in cooking. As winter is still with us, i enjoyed making this simple green peas soup. More than easy and convenient, i can say its a one pot meal. Just pop onion, peas and some spices into the pressure cooker, blend it and enjoy with bread toast or sandwich etc.

I love soup at any time of the year but particularly in winter.I could say it's a comfort food on cold winter mornings as they warm up from inside. Hence i just love winter and soup. So today's recipe is a very easy tomato soup which is my all time favorite soup. It taste best when served with bread chunks. Here is the piping hot ladleful of tomato soup.

Lamb Leg Soup

Whenever i think of soup in non vegetarian category, my choice is aatukkaal soup - a spicy soup of leg of lamb. During my school and college days whenever we suffer from cold my mom prepare this for me and my brother and compulsorily we have to drink it. My mom starts preparation of this soup before night. Before she goes to bed she pressure cook the bones and leave it overnight. Next day morning after our breakfast we have to drink this. This is the most common natural remedies for cold symptoms. My mom learnt this recipe from her mother and i learnt from my mom. This is very tasty and this is a natural remedies for cough, cold, strengthening bones...... but the fat content is high..... so who have high cholesterol level should avoid this.

Mixed Sprouts and Peanut Salad

Salads are uniformly low in fat, full of vitamins and makes a perfect accompaniment to a variety of dishes. And this sprouts salad is simple and easy to make which is healthy, colorful and crunchy. Here is the little healthy side dish.

Mixed Sprouts and Peanut Salad

Ingredients
  • Mixed Sprouts - 1 cup
  • Roasted Peanuts - 1/4 cup
  • Capsicum - 25 gms
  • Tomato - 1
  • Lemon juice - 3 tbsp
  • Black Pepper powder - 1/2 tsp
  • Salt to taste

Method
  • De seed the tomato and chop it, chop the capsicum also.
  • Remove the skin of the peanuts.
  • Mix all the ingredients and pour lemon juice and mix well and serve.

Spinach / Palak Soup

One way to start your day in a healthy way would be to have soup. Soups are the lightest and refreshing ones. A bowl of hot soup is more comforting on a cold winter's day. So i made the Spinach / Palak soup. It is one of the healthiest soup and a very nice way to include greens in our diet. I saw this in a cookery show from some local channel and i want to share this recipe to you all.

Ingredients
  • Spinach - 2 bunches
  • Onion -1, chopped
  • Tomato - 1, chopped
  • Butter - 1 tbsp
  • Pepper powder - 1 tbsp
  • Split Orange Lentils ( Massor Dal) - 1/2 cup
  • Panner - for garnishing
  • Salt to taste

Method

  • Pressure cook masoor dal and smash them properly. Add 1 cup of water to it and boil for 2 Min's and the stock is ready. Keep them aside
  • Melt butter in a pan, then add chopped onions to it and fry for 3 Min's.
  • Then add chopped tomato to it and saute for few Min's.
  • Then add chopped palak leaves and enough water to it and cook till leaves becomes tender.
  • Grind them to a smooth puree in a mixer.
  • Then add this puree to the dal stock and add salt and pepper to it and bring to a boil.
  • Garnish with grated pannner and serve hot with bread.

Chilled Cucumber Dill Soup

Dill leaves looks feathery. They are slightly bitter in taste. So taken only in combination. If taken regularly aids digestion and prevents constipation, help improve the functioning of the stomach. This fresh green plant is used as flavoring for soups, sauces and etc.

Ingredients
Cucumber - 2
Fresh Dill leaves - 1/2 cup, chopped
Yogurt - 1 cup
White Pepper - 1/2 teaspoon
Garlic cloves - 1 , Minced
Salt to taste

Method
  • De seed the cucumber and cut into chunks and keep aside.
  • Cook the chopped dill in 1/4 cup water and keep aside. Let it cool.
  • Grind the cucumber and dill in a food processor until pureed.
  • Transfer this mixture to a bowl.
  • Add yogurt, garlic, salt , and pepper and stir well.
  • Chill until served.

Horse gram Soup

Ingredients
3 tsp Horse Gram (Kollu )
3 pods garlic
1/2 tsp Cumin Seeds
1/2 tsp pepper Seeds
1 Red Chilly
2 cups of water
Salt
Method
Grind garlic, cumin, pepper, chilly and salt. Keep aside. Soak horse gram in water for 1/2 to 1 hour. Pressure cook horsegram by adding 2 cups of water. Drain the liquid to a sauce pan. Add the grinded paste to it and bring to a boil. Garnish with coriander leaves and serve it in bowl. If u need more spicy, adjust the pepper and chilly accordingly.
