Today recipe is tandoor style brinjal fry recipe. Yes it tandoori style, lightly charred, roasted, spicy and tangy. This brinjal fry recipe has become one of my most favorite recipes. You can serve this as a starter also. This is the ultimate combination with curd rice. Curd rice and brinjal fry goes well with each other and tastes awesome with curd rice. Ingredients:
- 1 Brinjal/ Eggplant
- 1 cup Curd / Yogurt
- 1 tbsp Ginger Garlic paste
- 1 tbsp Red Chilly powder
- 1/2 tbsp Coriander powder
- 1/2 tsp Cumin powder
- 1/2 tsp Garam masala
- 1/2 tsp Turmeric powder
- Juice from 1/2 Lemon
- Salt to taste
- Oil for frying
Method :

- Cut the brinjal into thin rounds
- In a bowl place curd, spice powders, lemon juice, salt and 1/2 tbsp oil and mix well.
- Coat the paste mixture evenly all over the brinjal slices.
- Cover and keep it in the fridge. marinate for 30 mins.
- Heat oil in a pan, place the brinjal slices one by one.
- Cook in low flame for 2 mins and flip the other side and cook for 2 more mins.
- Repeat the above step for all the slices.
- Garnish with coriander leaves. It tastes best with curd rice
