Chilli garlic noodles - An Indo Chinese recipe which is very easy to make and tastes very delicious. This is a fuss-free and quick meal for those busy weeknights.
We absolutely love this noodles recipe very much. It is a repeat meal in my kitchen. You can use any noodles you readily have. I have used egg noodles for this recipe. For the spiciness, adjust the quantity of chili sauce.

Ingredients:
- 200 gms Noddles
- 1 Onion, thinly sliced
- 1 tbsp Garlic, finely chopped
- 1 Carrot, peeled and thinly sliced
- ½ tbsp Green chili, finely chopped
- ½ Green Capsicum, thinly sliced
- ½ Red Capsicum, thinly sliced
- 1 cup shredded Cabbage
- 1 tbsp Soy sauce
- ½ tbsp Red chili sauce
- ½ tbsp Green chili sauce
- Pepper powder
- Salt to taste
- 1 tbsp Oil
- Bring 2 liters of water to a rolling boil in a saucepan.
- Add a few drops of oil and a little salt to it and mix well. Next, add the noodles and give a mix.
- Boil the noodles till they are 90% cooked on medium heat.
- Once cooked drain the noodles in a colander and rinse in cold water. Keep aside to drain completely.
- Heat 1 tbsp oil in a wide saucepan. When hot add chopped garlic, green chili, and onion. Saute the onion till they are transparent.
- Next add the carrot, capsicum, and cabbage to it. Saute on low heat for 3 mins.
- Add all the sauces and mix well and saute for a minute.
- Next, add the cooked noodles and mix well.
- Add pepper powder and spring onions. Stirfry the noodles for 5 mins on low heat.
- Serve hot with tomato ketchup.
