Today I'm going to share a simple, healthy, soft and chewy oats bar recipe. They make a great healthy evening time snack. It is super easy to make and can be done in half an hour. Just pack this for kids to school as an afternoon snack and it also makes a travel-friendly recipe too.

Ingredients
  • 200 gms or 2 1/2 cup Oats
  • 115 gms or 1/2 cup Any Mixed Dry Fruits & Nuts  ( I used Pecan nuts, dry grapes, Almonds - chopped roughly )
  • 55 gms or 1/2 cup Wheat flour
  • 85 gms or 1/2 cup Brown Sugar
  • 115 gms Butter
  • 1/2 tsp Cinnamon powder ( optional )
  • 2 tbsp Honey
Method
  • Preheat the oven to 180. Grease a 9 " square cake tin with the butter and line with the butter paper. keep aside.
  • Place the oats, mixed dry fruits, nuts, wheat flour, cinnamon powder in a large bowl and mix well together. Keep aside
  • Place the butter, brown sugar, honey in a saucepan over low heat and stir until melted. Once melted and combined, remove the pan from the stove.
  • Add the dry ingredients mixture to the butter honey mixture and mix well together.
  • Spoon the mixture into the prepared cake tin and smooth the surface with the back of the spoon.
  • Bake in the preheated oven for 20 - 25 minutes or till firm to touch.
  • Once done, remove from the oven, leave it for 5 minutes on the kitchen countertop. Remove it from the cake tin and then cut into pieces and allow it to cool completely.
  • Store it in an airtight container and enjoy.

Jack Fruit Seed Stir fry | Palakottai Podimas | Simple and Yummy Recipes

Palakottai Podimas / Jackfruit Seed stir fry is an easy and tasty South Indian recipe and makes an excellent side dish for plain rice with sambar, rasam and curd. We call this Jack fruit seed as ' Palakottai ' in Tamil.

In South India, we add jackfruit seeds to sambar, aviyal, mix veg kootu etc.... Try making sambar with jackfruit seed along with some drumsticks, that sambar will have a different awesome to it and you will definitely fall in love with it. Whenever there is Jackfruit season, I will never miss making sambar and podimas ( stirfry ) with jackfruit seeds.
For all the stir-fries, we usually add grated coconut at the end. I have not added any coconut here, if you wish and you want more quantity, add some grated coconut at the end.
For the sambar recipe with the drumstick, check this link here " Drumstick Sambar ". Add Jack fruit seeds along with drumstick and follow the same instruction as mentioned.

Ingredients
  • 1 Onion, medium-sized, chopped finely
  • 2 Green chillies, finely chopped
  • 1/2 inch Ginger piece, finely chopped
  • 15 nos of Jack Fruit Seeds / Palakottai
  • 1/2 tbsp Channa Dal
  • 1 tsp Mustard seeds
  • Few Curry Leaves
  • Salt as required
  • 2 tbsp Oil
Preparation :
  • Place the jack fruit seeds with 1 cup of water and a little salt in a pressure cooker. Pressure cook for 1 or 2 whistles and switch off the flame. When the steam goes down, open the lid. Drain the water, mash the seeds partially and keep aside.
  • Instead of using the pressure cooker, you can also boil the jack fruit seeds in a pan till it is done.
Method :
  • Heat oil in a pan, when hot add channa dal / Bengal gram and mustard seeds. Allow it to splutter.
  • Add onion, ginger, green chillies, curry leaves and fry till onion turns light brown in colour.
  • Add required salt and mashed jack fruit seeds. Mix well and stir-fry for a minute and remove from the stove.
  • Serve it with plain rice and sambar, rasam and curd.
You can even add grated coconut at the end, mix well and serve.

Onion Tomato Gotsu Recipe - Thakkali Gotsu - Tomato Gothsu / Kosthu Recipe.
A simple and easy side dish or chutney recipe for idli and dosa. It can be quickly done and a very tasty side dish/chutney recipe for idli and dosa. It can be served as a side dish for chapathi and rice also.
For this recipe use only the ripe tomatoes. If you use ripe tomatoes, the tomatoes will become mushy to give a gravy-like consistency and even cooks quickly. If using ripe tomatoes,  no need to add water, as the tomatoes release lot of water.

Onion Tomato Gothsu
Cuisine: South Indian
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves: 2
Ingredients :
  • 2 Onions, medium-sized, chopped
  • 3 Tomatoes, chopped ( ripe tomatoes is a must )
  • 2 Green Chillies, slit
  • 10 Garlic cloves, chopped
  • 1/2 inch Ginger, finely chopped
  • 1 tsp Mustard Seeds
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Asafoetida / Hing
  • Few Curry Leaves
  • Salt to taste
  • 2 tbsp Oil
Method :
  • Heat oil in a heavy-bottomed kadai/ wok. When hot, add mustard seeds and cumin seeds and allow it to splutter.
  • Add in curry leaves and asafoetida to it.
  • Then add onion, green chillies, Garlic, Ginger and saute till onions turn translucent.
  • Add tomatoes, red chilly powder, turmeric powder and salt. Saute and cook on high heat for 3 minutes.
  • Cover and cook for 10-15 mins on low heat or till it is done. (At this stage if needed add 1/4 cup of water )
  • Garnish with coriander leaves. Serve with idli and dosa.

Chocolate Cupcake with Chocolate Ganache frosting | Simple and Yummy Recipes

Today's recipe is Easy Chocolate Cupcake recipe with chocolate ganache frosting. These cupcakes are easy, incredibly soft, fluffy, spongy and moreover its a one-bowl chocolate cupcake recipe. Also, I have shared the video tutorial of How to make chocolate cupcake recipe at home.

Chocolate Cupcakes
Ingredients:
  • 150 gms Unsalted Butter
  • 150 gms Powdered Sugar or Castor Sugar
  • 165 gms Maida flour or All-purpose flour
  • 15 gms Cocoa powder
  • 1 1/2  tsp Baking powder
  • pinch of salt
  • 3 Eggs
  • 1 tsp Vanilla Extract
Preparation:
  • Line a 12 section cupcake tray with cupcake cases.
  • Preheat the oven to 180 degree Celsius.
Method :
  • Put all the ingredients one by one in a large bowl and beat with a handheld electric whisk for 1 minute.
  • Scrape the sides of the bowl and whisk again for 2 more minutes until light and creamy.
  • Divide the cake mixture to the cupcake cases. Fill only 3/4 of the cases.
  • Bake in the preheated oven for 20 to 25 minutes or until risen and the skewer comes out clean when inserted.
  • Transfer to a wire rack and allow it to cool.

Chocolate Ganache Frosting Recipe:
Ingredients:
  • 2/3 cup Semi or Dark Chocolate Chips
  • 1/3 cup Fresh Cream
Method:
  • Place chocolate chips and fresh cream in a microwave bowl and melt it in low temperature for a minute. Mix well. If it is not melted, microwave for 30 more seconds.
Frosting Cupcakes
  • Take a spoonful of ganache and pour over the cupcakes and spread evenly. Decorate it with sprinkles or any nuts of your choice.

Egg Malai Curry | Egg Malai Masala | Simple Egg curry | Simple and Yummy Recipes

Egg malai masala is a very mildly spiced creamy gravy. This creamy gravy is made with milk, onion paste and very little spices. So kids will love this gravy.

This recipe should be cooked in low flame only. It needs very fewer spice powders and it has a very mild sweet taste, so it is a kid-friendly recipe. If you want a little more spicy, increase the number of green chillies. It tastes lovely when served with butter naan or roti.

Preparation time: 5 minutes
Cooking Time: 20 minutes

Ingredients:
  • 3 Eggs
  • 1 Onion, large sized
  • 3 to 4 Green Chillies
  • 6 cloves of Garlic
  • small piece of Ginger
  • 1 tsp Cumin powder
  • 1/2 tsp Pepper powder
  • 1/2 tsp Garam masala powder
  • Few Coriander leaves
  • Salt to taste
  • 2 tbsp Oil
Preparation :
  • Boil the eggs, peel the skin and cut into halves and keep aside
  • Place onion, chillies, ginger and garlic in a mixer or in a blender and blend to a smooth paste.
  • Chop the coriander leaves.
Method:
  • Heat 2 tbsp of oil in a kadhai or in a pan.
  • When the oil is medium hot add onion paste and saute. Keep frying the mixture for 15 minutes in low flame. Cook till raw smell goes off.
  • Add the masala powders and salt and mix well.
  • Now add the milk and mix well. Cook in low flame till the oil separates.
  • Once the oil separates, place the egg yolk side down. Cover and cook on low flame for 2 minutes.
  • After 2 minutes open the lid, flip the egg yolk up, cover and cook again for another 2 minutes.
  • Finally, add the chopped coriander leaves and gently mix. Switch off the flame.
  • Serve the egg curry with naan or roti.
